No Bake Peanut Butter Coco Oatmeal Cookies

Ingredients

2 cups sugar
1/2 cup Butter (1 stick butter)
3 Tbsp. cocoa powder
1/2 cup milk
3/4 cup crunchy peanut butter
1 1/2 tsp. vanilla extract
4 cups oatmeal (I prefer old fashioned rolled oats, not instant)

Directions

Over medium heat, mix the sugar, butter, cocoa, and milk in a medium/large saucepan. Boil for 1 minute.

Turn off the heat and add the peanut butter and vanilla. Mix quickly until peanut butter melts completely. Then add the oatmeal and mix until well blended.

Using a 2 tbsp scooper (a spoon will also be fine) drop spoonfuls onto tin foil, wax paper or parchment.
It’s going to be tough to resist eating them, but allow the cookies to set and cool completely.

Makes 3 1/2 dozen 2 tbsp cookies.

Garbanzo Beans

So for the most part, I have a major sweet tooth. A MAJOR sweet tooth! But sometimes I like salty things too. Today, I made roasted garbanzo beans. Garbanzo beans, also known as chickpeas, are an excellent source of essential nutrients, iron, folate, phosphorus, protein and dietary fiber (according to the USDA nutrient table).
Garbanzo beans are high in protein and low in fat. Just one hundred grams of mature boiled chickpeas contain 7.6 grams of dietary fiber and 8.9 grams of protein!  

All that being said, they were super easy to make and came out crispy, salty, and delicious!

Ingredients

2 cans of garbanzo beans
1 1/2 Tbs olive oil
Garlic powder
Onion powder
Pepper
Lawry’s seasoned salt (or Mrs. Dash or whatever your favorite spice mix combination)

Directions

Rinse the garbanzo beans and dry on a paper towel.
I don’t like the skins on the beans, so I skinned them all, (time consuming…yes, delicious also yes.)
Combine the seasonings and olive oil in a large bowl
Gently stir in garbanzo beans until evenly coated with olive oil mixture
Then place the garbanzos in a single layer on a cookie sheet
and bake for 30-40 minutes at 400 degrees (or until desired crispiness is reached.)

I bet I could even make this into a sweet snack too by substituting the olive oil with melted butter and spices with sugar and cinnamon, (see what I mean, a major sweet tooth!)

Apple Crisp Recipe

Ever since I was little, every year in the fall my family goes apple picking! I love it.  My favorite apples to eat are Macintosh.  So crisp and sweet!
One of my favorite things to do with all the other types of apples that we pick is to make apple crisp.  If you’re looking for a great apple crisp recipe, here is a delicious one from Hoosier Homemade.

  • 4 cups (4 large or 5 medium apples) sliced apples
  • ¾ cup brown sugar
  • ½ cup flour, all-purpose
  • ½ cup oatmeal, quick cooking is best
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • ½ cup butter or margarine, softened plus additional butter for pan
Directions
  1. Preheat oven to 350 degrees and butter a 8×8 baking dish
  2. Slice apples and place in buttered pan
  3. Combine dry ingredients for topping, and mix in butter until crumbled
  4. Add to top of apples
  5. Bake at 350 degrees for 30 minutes or until apples are tender and bubbly
  6. Serve with ice cream and caramel if desired
Serves: 4 servings
Recipe can easily be doubled

I have had these before and I LOVE them.  I think that the Caesar flavor is better than the lightly salted one, but both are tasty. (Although, the Peas of Mind and Inner Beans from Trader Joe’s are waaaaaayyyy better!)

Ingredients:
1 12oz Package Semi Sweet Chocolate Chips
1 16oz Bag of Marshmallows
Graham Crackers for dipping

Instructions:
Place the chocolate chips in a large cast iron skillet.
Top evenly with the marshmallows.
Place skillet into a 450 degree oven for about 5-7 minutes or until the marshmallows are toasted.
Remove from oven and serve hot with graham crackers or cookies.

Creamy Peanut Butter Bars

Baked In Arizona has some awesome recipes on her site.  These Creamy Peanut Butter Bars are some of my absolute favorites. Her recipe is a bit different from ones that I have made it the past, but still so simple yet so delicious!

Definitely one of my very favorite treats! I highly recommend you make these! I usually give some away to friends as a gift because I cannot trust myself to not eat the entire thing all by myself.  They are so delicious!

Creamy Peanut Butter Bars

Ingredients:
1 cup ritz crackers, crushed
1 cup peanut butter
1 cup butter, softened
2 cups powdered sugar
2 cups milk chocolate chips
Instructions:
Grease a 9×13 inch pan. Set aside.
Mix the crackers, peanut butter, butter and powdered sugar together in a medium sized bowl.
Press the mixture into the prepared pan. Sprinkle the chocolate chips over the mixture and place in a 400 degree oven for 5 minutes. Cool slightly then spread chips out with a spatula. Let the chocolate set up in the fridge (or freezer if you are impatient like me) then cut into squares and enjoy!
Notes: To make this a no-bake bar, you could melt the chocolate chips in the microwave or stove top and then spread over the top.
