Chicken Piccata

I’m a creature of habit. Whenever we dine out at a fancy restaurant, I always find myself drawn to one of three dishes: a hearty braised beef, a delicate salmon, or a classic Chicken Piccata. While these restaurants certainly know how to elevate these dishes, I’ve learned that I don’t need a Michelin-star chef to enjoy a delicious plate of Chicken Piccata. In fact, this elegant dish is surprisingly simple to make at home.

Ingredients:

  • 4 boneless, skinless chicken breasts, pounded thin
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers, drained
  • 1/4 cup chopped fresh parsley
  • Prepared pasta or rice

Instructions:

  1. Prepare the chicken: Pounding the chicken thin is a very important step in making this chicken dish taste delightful.
  2. Dredge each chicken breast in flour seasoned with salt and pepper. Dip in beaten eggs, then coat with breadcrumbs.
  3. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Cook the chicken breasts until golden brown on both sides. Remove from the pan and set aside.
  4. Make the sauce: In the same skillet, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in chicken broth, white wine, and lemon juice. Bring to a boil, then reduce heat and simmer until thickened.
  5. Combine and serve: Stir in capers and parsley. Return the chicken to the sauce and cook for a few more minutes until heated through. Serve immediately with pasta or rice.

I love this lemony, caper-topped, and just buttery enough chicken dish! Enjoy your homemade Chicken Piccata!

Lemon Crumb Bars

I haven’t posted a recipe in such a long time!  I figured that I would share one of my favorite treats with you today.

I love lemons!  Anything with a lemon flavor is instantly one of my favorites! These Lemon Crumb Bars as no exception!  They are absolutely delicious!

Ingredients

1-1/3 cup All-purpose Flour
1/2 teaspoon Salt
1 teaspoon Baking Powder
1 stick (1/2 Cup) Butter, Slightly Softened
1 cup Brown Sugar (lightly Packed)
1 cup Oats
1 can (14 Ounce) Sweetened Condensed Milk
1/2 cup Lemon Juice
Zest Of 1 Lemon

PREHEAT OVEN TO 350 DEGREES.

Mix butter and brown sugar until well combined.
Sift together flour, salt, and baking powder.
Add oats and flour to butter/sugar mixture and mix to combine.
Press half of crumb mixture into the bottom of an 8 x 11-inch pan.
Mix together condensed milk, lemon juice, and lemon zest.
Spread onto the bottom layer of the crumb mixture.
Top with the other half of the crumb mixture, but don’t press.
Bake for 20 to 25 minutes, or until golden brown.
Allow pan to sit on the counter for 30 minutes after baking.
Cut into squares and refrigerate for a couple of hours or until cool.

Try not to eat them all at once, these things are delicious!!!

Martha Stewart’s 15 minute Sauteed Pork Cutlets

I’m a fan of Martha Stewart’s recipes and this pork cutlet one is no exception!

This quick and easy pork recipe can be made in only 15 minutes.  Not only is it simple, it is also delicious!

Martha Stewart’s 15 minute Sauteed Pork Cutlets

INGREDIENTS

8 pork cutlets (3 ounces each)

1 teaspoon coarse salt

1/2 teaspoon freshly ground pepper

2 to 4 tablespoons extra-virgin olive oil (you can also use grape seed oil which is my oil of choice.)

Juice of 1 lemon, plus lemon wedges for serving

2 tablespoons finely grated Parmesan cheese, plus Parmesan curls shaved with a vegetable peeler for garnish (about 1 ounce total)

Fresh flat-leaf parsley, for garnish Grainy mustard, for serving

DIRECTIONS

  1. Place pork cutlets between two sheets of parchment paper; using a meat mallet or a small, heavy skillet, pound to 1/8 inch thick. Season both sides of pork with salt and pepper.
  2. Heat 2 tablespoons oil in a large saucepan over medium-high heat. Working in two batches, add pork to pan, and cook, flipping once, until golden brown, 1 1/2 to 2 minutes per side. (If pan becomes dry, add more oil.) Transfer to a platter .
  3. Drizzle lemon juice over pork, and sprinkle with grated Parmesan. Garnish with Parmesan curls and parsley. Serve with lemon wedges and mustard.
  4. Serve over couscous with green leafy salad .
  5. Enjoy!
