Super Simple Cake Mix Cookies

super simple cake mix cookies | lookingjoligood.blogI have been making these cookies for my family recently and they have been loving them!  They are so simple to make and yet so delicious.

I even like to add in some other ingredients like chocolate chips and nuts.  Sometimes I will put two together with frosting in between and make a whoopie pie out of them.

super simple cake mix cookies whoopie pies | lookingjoligood.blogSince there are so many different cake mix flavors, the options are endless!  Some of my favorites flavors to make are devil’s food, funfetti, and white cake with chocolate chips.

If you want your cookies to turn out looking like crinkle cookies, use a chocolate cake mix cookies and roll the balls of dough through a pile of powdered sugar before baking.  They are so good!!!

  • 1 (18.25 oz) box of cake mix- any kind.
  • 2 Eggs
  • 1/3 c. Vegetable Oil (I used grapeseed, but you can use whatever type you like)
  • 1 TBS water

  1. Heat oven to 375.
  2. Mix cookie ingredients together.
  3. Scoop dough onto cookie sheet.  If you don’t have a scoop just roll the cookies into balls and place them evenly spaced onto cookie sheet.
  4. Cook for 7-9 minutes or until the edges start to brown.

These are the scoops I use.  I bake the cookies for 7.5 min for the smaller scoop and 9 min for the larger scoop.

Perfectly Chocolate Chocolate Frosting

Recently we celebrated my husband’s birthday, and I made a white cake with chocolate frosting.  While the cake tasted great, let’s be honest, the star of every cake is always the frosting.This chocolate frosting is so delicious!  It is such a simple recipe and you can find it right on the back of the Hershey’s cocoa powder container

Ingredients:

1/2 cup (1 stick) butter

2/3 cup HERSHEY’S Cocoa

3 cups powdered sugar

1/3 cup milk (do not add it all in at once)

1 teaspoon vanilla extract

Directions:

1. Melt butter.
2. Stir in cocoa.
3. Alternately add powdered sugar and milk, beating to spreading consistency.
4. Add small amount additional milk, if needed.
5.Stir in vanilla.

Makes about 2 cups of frosting.

Dump Cake

Have you ever heard of “dump cake” before? I had never heard of it until I had some for the first time a few years ago for Christmas dinner dessert.  And let me tell you, it was delicious and love at first bite! It’s as simple as dumping everything into a baking dish and topping it with a yellow cake mix and butter…lots of butter 🙂

It may not look super pretty once it is on the plate, but it sure is super yummy!  It is also absolutely delicious with some vanilla ice cream, or whipped cream or cool whip on top too. I can’t wait to have it again!

1 can (21 Oz.) Cherry Pie Filling
1 can (15 Oz.) Crushed Pineapple
1 box (about 18 Oz.) Yellow Cake Mix
1 stick melted Butter

Dump cherry pie filling and crushed pineapple into 9×13 baking dish. Stir together.
Sprinkle cake mix over the top of the fruit. Pour melted butter over the surface of the cake mix.
Bake at 350 degrees for 35ish minutes.

Some other varieties you can make…

Substitute the Yellow Cake Mix for a spice cake mix and the pineapples and cherries for some apple pie filling and it will make a delicious apple crisp like dessert.

Substitute the pineapples and cherries for 3 cans of peaches and you have a peach cobbler.

Substitute the Yellow Cake Mix for a spice cake mix and the pineapples and cherries for some pumpkin pie filling, add some walnuts or pecans and you have a yummy pumpkin cobbler.

The fruit combos are pretty much endless!
