Peppermint Bark

A festive and easy-to-make treat that’s perfect for gifting or enjoying yourself:

Ingredients:

  • 12 ounces white chocolate chips
  • 12 ounces dark chocolate chips1
  • 1/4 cup crushed peppermint candy canes

Instructions:

  1. Melt the chocolates: Melt the white chocolate chips in a microwave-safe bowl in 30-second increments, stirring in between, until smooth.
  2. Spread the white chocolate: Spread the melted white chocolate onto a parchment-lined baking sheet.
  3. Melt the dark chocolate: Melt the dark chocolate in the same way.
  4. Drizzle the dark chocolate: Drizzle the dark chocolate over the white chocolate, creating a marbled effect.
  5. Sprinkle with candy canes: Sprinkle the crushed peppermint candy canes over the top.
  6. Chill and break: Let the bark cool completely, then break it into pieces.

Tip: For a fun twist, add other ingredients like chopped nuts or dried fruit to the white chocolate layer before adding the dark chocolate. 🎄

Delicious Chocolate Chip Cookie Recipe

Cookies are my favorite sweet snack, and chocolate chip cookies are my favorite cookie.

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips
  • *see below for some delicious add ins*

Instructions:

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing well after each addition.
  5. Stir in the chocolate chips until evenly distributed throughout the dough.
  6. Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may still appear slightly soft, but they will firm up as the cookies cool.
  8. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes. Then transfer them to wire racks to cool completely.

My Seventeen Favorites of 2017

I cannot believe that 2017 is already practically over!  Time really does fly!  I remember saying to one of my patients in May that it would be 4th of July in no time, and here it is already almost New Year’s Eve!  Where did the year go?!

I have read some great ones and some not so great ones.  Out of all the books that I have read this year, The Best Yes by Lysa TurKerst has made the most impact on my life.  I have been teaching a Bible study at my church based on this book. Perfectly Chocolate Chocolate Frosting

Recently we celebrated my husband’s birthday, and I made a white cake with chocolate frosting.  While the cake tasted great, let’s be honest, the star of every cake is always the frosting.This chocolate frosting is so delicious!  It is such a simple recipe and you can find it right on the back of the Hershey’s cocoa powder container

Ingredients:

1/2 cup (1 stick) butter

2/3 cup HERSHEY’S Cocoa

3 cups powdered sugar

1/3 cup milk (do not add it all in at once)

1 teaspoon vanilla extract

Directions:

1. Melt butter.
2. Stir in cocoa.
3. Alternately add powdered sugar and milk, beating to spreading consistency.
4. Add small amount additional milk, if needed.
5.Stir in vanilla.

Makes about 2 cups of frosting.

Sea Salt Nutella Chocolate Chip Cookies

What would Christmas be without Christmas cookies?!  Here is the recipe for a new favorite cookie of mine Sea Salt Nutella Chocolate Chip Cookies

PREHEAT oven to 375° F.

  • 2 1/4 cups all-purpose flour ( for a healthier option use almond or coconut flour)
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar (for a healthier option use organic coconut palm sugar)
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups Chocolate chips
  • 1/3 cup of Nutella

COMBINE flour, baking soda and salt in small bowl. Beat butter, nutella, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

When these cookies are baking your house will smell similar to what I imagine heaven will smell like.  Yum! So delicious!

M&M’s Chocolate Chip Cookies

I have a major sweet tooth! Despite the fact that I have been trying to eat more healthy lately, when it comes to M&M’sChocolate Chip Cookies I cannot resist them!  They are one of my very favorites.  Here is one of my favorite recipes

Chocolate Chip M&M’s Cookies

Ingredients

  • 1 cup (2 sticks) butter
  • 2/3 cup brown sugar
  • 2/3 cup sugar
  • 1 egg
  • 1 1/2 teaspoon vanilla extract
  • 2 cup flour
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup
  • 1 3/4 cups M&M’S Milk Chocolate Candies

Directions

Preheat oven to 350 degrees F degrees.

In a large bowl, cream butter and both sugars until well blended. Add the egg and vanilla extract and mix to combine.

In a separate bowl, sift the flour, baking soda and salt together. Slowly add these ingredients into the butter mixture and stir until combined.Fold in the Chocolate Chips and M&M’s and chill the dough for 1 hour, or overnight.

Drop dough by rounded tablespoons onto a lightly greased tray, about 2 inches apart.

Bake for 8- 10 minutes for chewy cookies or 12-14 for crispy cookies.

Oatmeal Chocolate Chip Cookie

I LOVE oatmeal chocolate chip cookie dough!!! But…since eating raw eggs is really not a good idea, I baked up these cookies.  I tried to refrained from eating too much of the uncooked dough. There is just something about raw oatmeal chocolate chip cookie dough that I find absolutely irresistible.  Here is my go to recipe for oatmeal chocolate chip cookies:

Oatmeal Chocolate Chip Cookies

Ingredients

Yields approximately 6 dozen cookies

2 sticks butter, softened

1 1/4 cups packed brown sugar

3/4 cup granulated sugar

2 tsp. vanilla extract

2 large eggs

1 1/2 cups flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1 tsp cinnamon

1/4 tsp clove (a little goes a long way, so don’t over season with this spice)

3 cups old-fashion or quick cooking oats (uncooked)

2 cups semi-sweet or milk chocolate chips

Directions

Beat together butter, sugar and vanilla until smooth and creamy.

Beat in eggs until light and fluffy.

Add flour, baking power, cinnamon, clove, and salt and mix until blended.

Stir in oats and chocolate chips

Heat oven to 350 degrees.

Scoop dough into balls with 2 tsp scoop and place on cookie sheet 2 inches apart. I highly recommend using parchment paper, foil or a silicone baking sheet for the best results!

Bake 9-11 minutes until golden brown.

Enjoy and try not to eat them all at once!
