Chicken Piccata

I’m a creature of habit. Whenever we dine out at a fancy restaurant, I always find myself drawn to one of three dishes: a hearty braised beef, a delicate salmon, or a classic Chicken Piccata. While these restaurants certainly know how to elevate these dishes, I’ve learned that I don’t need a Michelin-star chef to enjoy a delicious plate of Chicken Piccata. In fact, this elegant dish is surprisingly simple to make at home.

Ingredients:

  • 4 boneless, skinless chicken breasts, pounded thin
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers, drained
  • 1/4 cup chopped fresh parsley
  • Prepared pasta or rice

Instructions:

  1. Prepare the chicken: Pounding the chicken thin is a very important step in making this chicken dish taste delightful.
  2. Dredge each chicken breast in flour seasoned with salt and pepper. Dip in beaten eggs, then coat with breadcrumbs.
  3. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Cook the chicken breasts until golden brown on both sides. Remove from the pan and set aside.
  4. Make the sauce: In the same skillet, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in chicken broth, white wine, and lemon juice. Bring to a boil, then reduce heat and simmer until thickened.
  5. Combine and serve: Stir in capers and parsley. Return the chicken to the sauce and cook for a few more minutes until heated through. Serve immediately with pasta or rice.

I love this lemony, caper-topped, and just buttery enough chicken dish! Enjoy your homemade Chicken Piccata!

Hearty Ham and Potato Soup

Another great way to use leftover holiday ham is to make soup with it. Ham and potato soup is a classic comfort food that’s perfect for a chilly day. Adding vegetables like carrots, celery, and peas will make it even more hearty and nutritious.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 6 cups vegetable broth
  • 4 cups water
  • 2 cups diced potatoes
  • 2 cups chopped cooked ham
  • 1/2 cup frozen peas
  • 1/2 cup heavy cream (optional)

Instructions:

  1. Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook until softened, about 5 minutes.
  2. Add broth and water: Stir in vegetable broth, water, thyme, and black pepper. Bring to a boil, then reduce heat and simmer.
  3. Add potatoes and ham: Add diced potatoes and chopped ham to the pot. Simmer for 20-25 minutes, or until potatoes are tender.
  4. Add peas and cream: Stir in frozen peas and heavy cream (if using). Simmer for 5 more minutes.
  5. Serve: Serve hot with a sprinkle of fresh parsley.

You can add heavy cream to the Ham and Potato Soup for a richer and creamier flavor. Simply stir in 1/2 cup of heavy cream to the pot after the potatoes and ham have cooked. Let it simmer for a few more minutes until the soup is heated through.

Enjoy this comforting and satisfying soup with some crackers or a crusty loaf of French bread!

Ham and Cheese Sliders

Yesterday I shared a recipe for Dr. Pepper and Pineapple Glazed Ham. Leftover ham doesn’t have to be boring! Transform it into a delicious appetizer or lite meal with these easy ham and cheese sliders. Perfect for parties or a quick weeknight dinner, these little bites of deliciousness will disappear fast!

Ingredients:

  • 1 loaf of slider rolls
  • 1/2 pound sliced ham
  • 1 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Prepare the rolls: Cut the slider rolls in half horizontally.
  3. Mix the spread: In a small bowl, combine mayonnaise, Dijon mustard, garlic powder, and onion powder.
  4. Assemble the sliders: Spread the mixture on the bottom half of each roll. Top with ham and cheese.
  5. Bake: Place the sliders on a baking sheet and bake for 10-12 minutes, or until the cheese is melted and bubbly.
  6. Serve immediately.

Peppermint Bark

A festive and easy-to-make treat that’s perfect for gifting or enjoying yourself:

Ingredients:

  • 12 ounces white chocolate chips
  • 12 ounces dark chocolate chips1
  • 1/4 cup crushed peppermint candy canes

Instructions:

  1. Melt the chocolates: Melt the white chocolate chips in a microwave-safe bowl in 30-second increments, stirring in between, until smooth.
  2. Spread the white chocolate: Spread the melted white chocolate onto a parchment-lined baking sheet.
  3. Melt the dark chocolate: Melt the dark chocolate in the same way.
  4. Drizzle the dark chocolate: Drizzle the dark chocolate over the white chocolate, creating a marbled effect.
  5. Sprinkle with candy canes: Sprinkle the crushed peppermint candy canes over the top.
  6. Chill and break: Let the bark cool completely, then break it into pieces.

Tip: For a fun twist, add other ingredients like chopped nuts or dried fruit to the white chocolate layer before adding the dark chocolate. 🎄

Gingerbread Cookies

I’m in the mood for holiday food. Over the next few days I am going to be sharing some holiday recipes. I love gingerbread cookies! These classic gingerbread cookies are perfect for decorating and gifting during the holidays.

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • Royal icing (for decorating)

Instructions:

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper or foil.
  2. Cream butter and sugars: In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the egg, then stir in the molasses.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until1 just combined.
  4. Roll and cut: Roll out the dough on a lightly floured surface to 1/4-inch thickness. Cut out shapes using cookie cutters.
  5. Bake: Place the cookies on the prepared baking sheets. Bake for 8-10 minutes, or until the edges are lightly browned. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  6. Decorate: Once cooled, decorate the cookies with royal icing and sprinkles.

Royal Icing:

  • 3 cups powdered sugar
  • 2-3 tablespoons meringue powder*
  • 1 teaspoon vanilla extract
  • 5-6 tablespoons water

Combine all ingredients in a bowl and beat with a mixer until smooth and spreadable.

*If you need a substitute for meringue powder, you can use an equal amount of reconstituted egg white powder mixed with water, a slightly smaller amount of aquafaba (the liquid from a can of chickpeas), or a gelatin mixture made with warm water and gelatin powder – just be sure to adjust the liquid content accordingly depending on the substitute you choose.

Enjoy these festive treats with a cup of hot cocoa, glass of milk, coffee, or tea!

Sweet Potato Casserole

I am sharing this recipe again this year because it is my favorite holiday side dish. I just finished preparing it for our dinner tomorrow and I cannot wait to eat it along with the other delicious thing we will be having for Thanksgiving dinner tomorrow.

Ingredients

  • 4 cups sweet potato, cubed*
  • 1/2 cup white sugar
  • 2 eggs, beaten
  • 1/2 tsp cinnamon
  • 1/2 teaspoon salt
  • 4 tablespoons butter, softened
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 3 tablespoons butter, softened
  • 1/2 cup chopped pecans

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Put sweet potatoes in a medium saucepan with water to cover. Cook over medium-high heat until tender; drain and mash. (or use canned yams and skip this step altogether.)
  2. In a large bowl, mix together the sweet potatoes, white sugar, eggs, cinnamon, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 9×13 inch baking dish.
  3. In a medium bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
  4. Bake in the preheated oven 30 minutes, or until the topping is lightly brown.

*If you’re using fresh sweet potatoes, you’ll need four to six sweet potatoes to get four cups, depending on their size. One 15-ounce can of sweet potatoes is equal to one cup of fresh sweet potatoes.

Cinnamon Topped Brown Sugar Muffins

Cinnamon Topped Brown Sugar Muffins Recipe

Ingredients

1 cup light brown sugar
1/2 cup butter, melted
1 cup milk
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1tsp cinnamon
2tbs white sugar

Directions

Preheat the oven to 375ºF. Grease or line 20 muffin cups with paper liners.
Combine cinnamon and white sugar, set aside.
In a large bowl, stir together the brown sugar and butter Add milk, egg and vanilla stir to combine. Add the flour, baking soda and salt and mix just until incorporated.
Divide the mixture between the prepared muffin cups, about 2/3 full each.
Bake in your preheated oven for 15 minutes or until golden brown and the tops springs back when lightly pressed on with your finger.

Delicious Fiddleheads

Does anyone else know what these tasty little veggies are?

Fiddleheads or Fiddlehead greens are the furled fronds of a young fern, harvested for use as a vegetable. If unpicked, each fiddlehead would unroll into a new frond.

They are only in season for such a small amount of time, but if you see fiddleheads at the grocery store you’ve got to try them!

I’ve seen them in the woods all around our house, but I’m always afraid to pick them just in case I accidentally pick the wrong thing and poison myself. Lol!

If I were to describe them, I would say that they taste like if asparagus, baby spinach, and green beans had a baby, with a bit of nuttiness. How’s that for a description, haha.

Wash them really well, blanch for two minutes then cook them on the stovetop with a bit of butter or olive oil for 3-5 minutes.

Super Simple Cake Mix Cookies

super simple cake mix cookies | lookingjoligood.blogI have been making these cookies for my family recently and they have been loving them!  They are so simple to make and yet so delicious.

I even like to add in some other ingredients like chocolate chips and nuts.  Sometimes I will put two together with frosting in between and make a whoopie pie out of them.

super simple cake mix cookies whoopie pies | lookingjoligood.blogSince there are so many different cake mix flavors, the options are endless!  Some of my favorites flavors to make are devil’s food, funfetti, and white cake with chocolate chips.

If you want your cookies to turn out looking like crinkle cookies, use a chocolate cake mix cookies and roll the balls of dough through a pile of powdered sugar before baking.  They are so good!!!

  • 1 (18.25 oz) box of cake mix- any kind.
  • 2 Eggs
  • 1/3 c. Vegetable Oil (I used grapeseed, but you can use whatever type you like)
  • 1 TBS water

  1. Heat oven to 375.
  2. Mix cookie ingredients together.
  3. Scoop dough onto cookie sheet.  If you don’t have a scoop just roll the cookies into balls and place them evenly spaced onto cookie sheet.
  4. Cook for 7-9 minutes or until the edges start to brown.

These are the scoops I use.  I bake the cookies for 7.5 min for the smaller scoop and 9 min for the larger scoop.

Baked Kale Chips

I have been trying to broaden my leafy green horizons.

So while “This kale salad tastes like I’d rather be fat!“…these baked kale chips taste so awesome that I cannot stop eating them!

Here is a quick and simple delicious recipe for baked kale chips.

  • 1 bunch or 1/2 bag of kale
  • 1 Tablespoon olive oil (I use grapeseed oil)
  • 1 Teaspoon seasoned salt

Directions

  • Preheat an oven to 350 degrees F (175 degrees C)

  • Line a non insulated cookie sheet with foil or parchment paper.
  • With a knife or kitchen shears carefully remove the leaves from the thick stems and tear or cut into bite size pieces. (don’t skip this step, these things taste nasty!)

  • Wash thoroughly and dry kale with a salad spinner.

  • Drizzle kale with olive oil and sprinkle with seasoning salt.*

*I prefer to add my oil and seasoned salt to a gallon sized zip top bag and shake it up until the kale is completely covered in the oil mix.

  • Spread out evenly on the foil lined baking sheet.

  • Bake until the edges brown but are not burnt, 15 to 20 minutes.**

**I like mine to be extra crispy so I bake the kale for 20 min (10 minutes on each side.)
