Slow Cooker Beef Stew

As you may remember I had I posted about meal planning and using my crock pot to make Seven Days of Clean Eating Slow-Cooker Recipes.  Here is another one of the recipes that we really enjoyed…

Slow Cooker Beef Stew | lookingjoligood.wordpress.comSlow Cooker Beef Stew

Serves 4 Ingredients

● 1 tsp salt
● 1 tsp black pepper
● 2 1/2 lbs boneless beef chuck roast, cut into 1″ cubes
● 1/2 cup red wine *optional*
● 1 cup beef broth
● 3 Tbsp tomato paste
● 1 yellow onion, diced
● 2 cups sliced mushrooms
● 3 carrots, chopped
● 1 tsp dried rosemary
● 1 tsp dried thyme
● 2 whole bay leaves
● 1/3 cup fresh Italian parsley, minced
● 3-4 garlic cloves, minced or pressed
● 1 healthy pinch of red pepper flakes
*you can add diced potatoes too*

Directions:
1. Cut beef into 1-inch pieces and season with salt and pepper. Place in slow cooker.
2. In a small bowl whisk tomato paste into the beef broth. Pour over beef along with the wine.
3. Add carrots, onion and mushrooms along with garlic and remaining seasonings.
4. Give the ingredients a good stir, cover and cook on low 4-6 hours or on high 2-3 hours. It’s done when the meat is cooked through and the veggies are tender. Remove bay leaves before serving. Garnish with fresh parsley if desired.

Balsamic Rosemary Chicken

Recently I posted about meal planning and using my crock pot to make Seven Days of Clean Eating Slow-Cooker Recipes.  Here is another one of the recipes that we really enjoyed…

Balsamic Rosemary Chicken

Serves 4-6 Recipe

Balsamic Rosemary Chicken | lookingjoligood.wordpress.comIngredients:
❏ 1 pound boneless, skinless chicken breasts
❏ 1/2 tsp. of minced garlic
❏ 1/2 tsp. of dried rosemary
❏ 1/2 cup balsamic vinegar
❏ pinch of kosher salt
❏ 1/4 tsp. of freshly ground black pepper

Directions:
1. Spray crockpot with cooking spray.
2. Combine all ingredients and cook on low for 4-6 hours.
3. Flip chicken about halfway through.
4. Turn crockpot to low and fork shred chicken, allowing to cook for another 30 minutes.
5. Serve with cous cous, rice, or quinoa to complete the meal… and don’t forget the veggies!

My kids get very excited about the box every month and we enjoy each trying a bit of everything in the box.  The Luna Protein Chocolate Salted Caramel bar and the Original Crackers by Beecher’s Handmade Cheese were the favorites in this months box.

Adult Complete Vitamin Pack “Who said only kids can get away with gummy vitamins? These fruity bites have enough good stuff like Omega 3s and fiber to please any doctor. Toss them back first thing in the morning to get all the good stuff you need for the day.”  I didn’t personally eat the two vitamins that came in my box.  I gave them to my kids and they loved them!  They said that they weren’t chewy like they expected, but that instead they had a soft texture.

Gluten Free Original Mini Pretzel Crisps “All the crunchy, salty goodness of pretzels minus the gluten. Perfect for stashing in a backpack for recess or munching while tackling math homework. Or if you want to get a little fancy, serve them with cheese or dip for a great party snack.”  I’m not a huge pretzel eater, so I am going to let my kids eat this one too.

I have had these before and I LOVE them.  I think that the Caesar flavor is better than the lightly salted one, but both are tasty. (Although, the Peas of Mind and Inner Beans from Trader Joe’s are waaaaaayyyy better!)

S’mores Dip

Ingredients:
1 12oz Package Semi Sweet Chocolate Chips
1 16oz Bag of Marshmallows
Graham Crackers for dipping

Instructions:
Place the chocolate chips in a large cast iron skillet.
Top evenly with the marshmallows.
Place skillet into a 450 degree oven for about 5-7 minutes or until the marshmallows are toasted.
Remove from oven and serve hot with graham crackers or cookies.

Oatmeal Chocolate Chip Cookie

I LOVE oatmeal chocolate chip cookie dough!!! But…since eating raw eggs is really not a good idea, I baked up these cookies.  I tried to refrained from eating too much of the uncooked dough. There is just something about raw oatmeal chocolate chip cookie dough that I find absolutely irresistible.  Here is my go to recipe for oatmeal chocolate chip cookies:

Oatmeal Chocolate Chip Cookies

Ingredients

Yields approximately 6 dozen cookies

2 sticks butter, softened

1 1/4 cups packed brown sugar

3/4 cup granulated sugar

2 tsp. vanilla extract

2 large eggs

1 1/2 cups flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1 tsp cinnamon

1/4 tsp clove (a little goes a long way, so don’t over season with this spice)

3 cups old-fashion or quick cooking oats (uncooked)

2 cups semi-sweet or milk chocolate chips

Directions

Beat together butter, sugar and vanilla until smooth and creamy.

Beat in eggs until light and fluffy.

Add flour, baking power, cinnamon, clove, and salt and mix until blended.

Stir in oats and chocolate chips

Heat oven to 350 degrees.

Scoop dough into balls with 2 tsp scoop and place on cookie sheet 2 inches apart. I highly recommend using parchment paper, foil or a silicone baking sheet for the best results!

Bake 9-11 minutes until golden brown.

Enjoy and try not to eat them all at once!

Creamy Peanut Butter Bars

Baked In Arizona has some awesome recipes on her site.  These Creamy Peanut Butter Bars are some of my absolute favorites. Her recipe is a bit different from ones that I have made it the past, but still so simple yet so delicious!

Definitely one of my very favorite treats! I highly recommend you make these! I usually give some away to friends as a gift because I cannot trust myself to not eat the entire thing all by myself.  They are so delicious!

Creamy Peanut Butter Bars

Ingredients:
1 cup ritz crackers, crushed
1 cup peanut butter
1 cup butter, softened
2 cups powdered sugar
2 cups milk chocolate chips
Instructions:
Grease a 9×13 inch pan. Set aside.
Mix the crackers, peanut butter, butter and powdered sugar together in a medium sized bowl.
Press the mixture into the prepared pan. Sprinkle the chocolate chips over the mixture and place in a 400 degree oven for 5 minutes. Cool slightly then spread chips out with a spatula. Let the chocolate set up in the fridge (or freezer if you are impatient like me) then cut into squares and enjoy!
Notes: To make this a no-bake bar, you could melt the chocolate chips in the microwave or stove top and then spread over the top.
