Shrimp Lettuce Wraps with Peanut Dipping Sauce

I haven’t posted a recipe in a long time!  Here is a tasty one from Natashaskitchen.com for Shrimp Lettuce Wraps with Peanut Dipping Sauce

These shrimp lettuce wraps make for one fantastic, delicious and super impressive (Gluten free – mind you) meal. We love the cup-like shape and dark leaves of the Boston, bib, or butter lettuce but regular lettuce works too 🙂

Ingredients

For the Lettuce Wraps:

  • 1 head of Lettuce.
  • 1 lb large Shrimp, peeled and deveined
  • Salt and Pepper
  • 1 Tbsp olive oil
  • 1 Avocado, sliced into strips
  • ½ Cucumber, sliced into strips
  • ½ bunch Cilantro
  • 1 medium Carrot, cut into matchsticks

Peanut Dipping Sauce:

  • ¾ cup Newman’s Own lowfat sesame ginger dressing (P.S. this dressing contains wheat so if you’re gluten free, try: Braggs ginger sesame)
  • 2 Tbsp creamy peanut butter (microwave 30 sec if peanut butter refrigerated)

Instructions

  1. Rinse and pat dry your shrimp. Sprinkle shrimp with salt and pepper. Add 1 Tbsp olive oil to a large hot non-stick skillet. Once oil is hot, add shrimp and saute on med/high heat 2 min per side or until cooked through. Don’t overcook them or they will turn rubbery.
  2. Cut your cucumber and carrot into thin matchsticks. Slice your avocado into strips. You should find a prettier avocado though; one that doesn’t look as sickly as mine.
  3. Make your dressing by whisking together the ¾ cup sesame ginger dressing with the 2 Tbsp peanut butter. If you have a tightly sealed tupperware, you can put it int there and shake ‘er up until it’s nice and smooth. This sauce is so so tasty and way too easy!
  4. Assemble your lettuce wraps with a lettuce leaf, several strips of carrot and cucumber, a decent slice of avocado, 2 shrimps and a couple good sized sprigs of cilantro. Don’t skip on the cilantro. At least give it a whirl. It totally reminds me of spring rolls and makes the entire spring roll dangerously enticing. Then drizzle the top with the peanut dipping sauce.

Cadbury Mini Eggs candies Cheesecake Dip

If you know me in person, you know that I am in LOVE with Cadbury Mini Eggs.  They are my all time favorite candy in the history of forever!  I cannot resist their sweet perfect yummy goodness!  Easter is my favorite  season for candy!  One of my friends recently shared this delicious looking recipe with me, and I wanted to share it with all of you.

Ingredients
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons brown sugar
  • 3/4 cup confectioner’s sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup Cadbury Mini Eggs candies, crushed
Instructions
  1. In a stand mixer or medium bowl beat cream cheese and butter together.
  2. Add brown sugar, confectioner’s sugar, and vanilla until well combined.
  3. Stir in Cadbury Mini Eggs candies with a spatula.
  4. Serve with graham crackers or cookies of your choice.

If you aren’t a fan of Cabdury Mini Eggs (maybe you should go get checked out by your doctor because there may be something wrong with you!) you can substitute any of your favorite Easter candy for the mini eggs.  I bet Reese’s pieces eggs  or Reese’s peanut butter cup eggs would be wonderful as well, or even M&M’s!  The candy combinations are pretty much endless!

1 unbaked 9-inch (4-cup volume) deep-dish pie shell *
2 large eggs
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter, softened
1 cup (6 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 cup chopped nuts
Sweetened whipped cream or ice cream (optional)
Directions

PREHEAT oven to 325° F.

BEAT eggs in large mixer bowl on high speed until foamy. Beat in flour, granulated sugar and brown sugar. Beat in butter. Stir in morsels and nuts. Spoon into pie shell.

BAKE for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on wire rack. Serve warm with whipped cream or ice cream, if desired.

* If using frozen pie shell, use deep-dish style, thawed completely. Bake on baking sheet; increase baking time slightly.

Homemade Twix Bars

 I LOVE caramel!

One of my favorite candy bars of all time is Twix.

Total time: 50 MINUTES + COOL TIME

Ingredients:

Shortbread:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2/3 cup butter, softened slightly

Caramel:

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup sweetened condensed milk
  • 2 Tablespoons corn syrup

Chocolate:

  • 2 cups chocolate chips
  • 1 teaspoon vegetable oil

Directions:

Preheat the oven to 350ºF. Line a 9×9 pan with parchment paper or spray with non-stick cooking spray. Set aside.

Combine the flour and sugar in a medium size bowl. Then cut the butter in with a pastry cutter or two forks, until it forms a crumb mixture. Then press down into the pan and bake for 20 minutes. Remove from oven and allow to cool.

For the caramel add the butter to a medium saucepan and melt over medium heat. Stir in the brown sugar, corn syrup, and sweetened condensed milk. Bring to a boil and cook for 5 minutes, stirring constantly. Remove from heat and stir an additional 2 minutes, or until it starts to thicken. Pour over cooled shortbread bars. Allow to cool.

Once the caramel has become firm, mix the chocolate and oil in a microwave safe bowl. Cook on high for 1 minute. Stir and cook in 15 second intervals, until the chocolate is melted. Then pour over the caramel layer and allow to set. May place in the fridge to help set faster.

Once the chocolate has hardened, cut into squares with a warm knife.

Easy Crock Pot Potato Soup

Way back when Pinterest was brand new and there weren’t too many people that used it yet, I pinned this easy crockpot potato soup from Pearls Handcuffs and Happy Hour.  As we all know, Pinterest has really taken off and it has been a huge blessing to bloggers of all kinds.

I have made this soup so many times, and ever time I make it I love it just as much!  Very simple, very delicious.  Perfect for dinner on cold winter days!

Ingredients:

1 30oz. bag of frozen, shredded hash browns

3 14oz. cans of chicken broth

1 can of cream of chicken soup

1/2 cup onion, chopped

1/4 tsp. ground pepper

1 pkg. cream cheese (Fat free cream cheese won’t melt)

Directions:

In a crockpot, combine everything EXCEPT for the cream cheese.
Cook for 6-8 hours on low heat.
About 1 hour before serving, add cream cheese and keep heated until thoroughly melted.
Serve with cheese, sour cream, bacon bits, green onions (Sometimes if I have leftover ham I will cut it up and add it into the soup, ham is my favorite!)

Broccoli Salad

A few years ago we went to a cookout at my husband’s Aunt’s lake house.  She served this broccoli salad, and I was in instant love!  She has always been a wonderful cook with lots of great recipes. I think that every time I left her house I had a new recipe that to add to my collection.  This broccoli salad is quite simple and very delicious.

Ingredients:

  • 1 head broccoli, stems removed and florets cut into pieces
  •  4 slices cooked bacon, crumbled 
  • 1/2 cup red onion, chopped
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 3/4 cup  mayonnaise
  • 2 tbsp white vinegar
  • 1 1/2 tbsp white sugar
  • 1/4 cup roasted no salt added sunflower seed kernels
  • sea salt and freshly ground black pepper to taste

Directions:

  1. In a small bowl combine mayo, vinegar, sugar, salt and pepper.  Mix well and set aside.
  2. In a large bowl combine broccoli, bacon, onion, cranberries, and raisins.  Gently stir in the mayo dressing completely covering the broccoli mixture.
  3. Sprinkle with sunflower seeds and serve immediately.

The only down side to this delicious salad is that due to the fact that it doesn’t keep well, it has to all be eaten on the day it is made .  But hey, that is not really much of a problem considering how delicious it is!

Easy Cheesy Pizza Dip

Pizza is usually an easy crowd pleaser!  Not many people can resist the wonderful taste of a warm slice of cheesy pizza.  This dip is a wonderful hot cheesy goodness with all of the favorite flavors of a cheese, pepperoni, and olive pizza!  It is perfect for serving at a party (or eating alone :-)).  As is, it serves four, but can easily be doubled, or tripled.

Prep Time: 10 minutes
Cook Time: 20 minutes
Servings: 4

Ingredients

4 ounces cream cheese, room temperature 1/4 cup sour cream
1/4 cup mayonnaise
1/2 cup mozzarella, shredded
1/4 cup parmigiano reggiano (parmesan), grated
1 cup pizza sauce
1/2 cup mozzarella, shredded
2 ounces pepperoni, sliced
3 tablespoons sliced black olives
2 tablespoons diced green pepper, (I personally hate peppers, so I would never add these to my own dip, gross! But, hey if you love peppers, add them in.)

Directions

  1. Pre heated the oven to 350 F
  2. Mix the cream cheese, sour cream, mayonnaise, mozzarella, and parmigiano reggiano cheese. Spread it across the bottom of a pie dish.
  3. Spread the pizza sauce on top and sprinkle on the cheese, pepperoni, olives (and if you choose green pepper).
  4. Bake about 20 minutes or until warmed through out and bubbling and the cheese is fully melted to a golden brown on top
  5. Serve with bruschetta or tortilla chips.

You can also make this recipe in the crock pot.  If you have been around Looking Joli Good for any amount of time, you know I love my crock pot!  So simple, and perfect for keeping the dip warm if being served at a party!  Layer everything in the slow cooker in the same way you would in the pie baking dish.  Slow cook until the cheese is nice and melted usually about 1 hours on high or 2 hours on low.

  • Prep time: less than 10 minutes
  • Cook time: 5 minutes
  • Yield: Serves 4

Ingredients

  • 1 pound large (16-20 count) raw shrimp, shelled and de-veined**
  • 2 Tbsp olive oil
  • 2-3 Tbsp butter
  • Salt
  • 1 Tbsp minced garlic (or 3-4 garlic cloves)
  • 1/3 teaspoon red pepper flakes (to taste)
  • 1/2 cup white wine
  • 2 tablespoons finely chopped parsley
  • Freshly ground black pepper to taste
  • 1 Tbsp lemon juice

**You can use frozen raw shrimp, just defrost them quickly (and safely) by putting the shrimp in a large bowl of salted ice water  about 1 1/2 teaspoons of salt for every quart of water.

Directions

1 Heat a sauté pan on high heat then decrease to medium high heat. Swirl the butter and olive oil in the pan until the butter is melted. Stir in the garlic and red pepper flakes.

Sauté the garlic for just until it begins to brown at the edges.

3 Add the shrimp, and then the wine. Stir coating the shrimp with the butter, oil, and wine. Keep the shrimp in an even layer in the pan. Increase the heat to high and boil the wine for two to three minutes.

4 Turn the shrimp over to be sure to cook evenly on both sides. Continue to cook on high heat for another minute.

5 Remove the pan from the heat.

6 Sprinkle the shrimp with parsley, lemon juice, and black pepper.

7 Serve over your choice or pasta (my favorite is angel hair!)

Slow Cooker Pork Tenderloin

Recently I posted about meal planning and using my crock pot to make Seven Days of Clean Eating Slow-Cooker Recipes.  Here is another one of the recipes that we really enjoyed…

Slow Cooker Pork Tenderloin
Serves 4-6

❏ 2 pork tenderloin
❏ ¼ cup low sodium soy sauce or coconut aminos
❏ 1 Tbsp yellow mustard
❏ 2 Tbsps maple syrup
❏ 2 Tbsps olive oil
❏ 1 ½ tsp garlic powder
❏ ½ small onion diced

Directions:
1. Place tenderloin in the slow cooker.
2. Mix all other ingredients and pour over the pork.
3. Cook on low for 6 hours.
4. Serve with brown rice or couscous and a veggie of your choice
